Main components

Black beans: About 7–8 g of protein per ½ cup cooked. Soluble and insoluble fiber support for digestion and feeling full. Good source of iron, folate, zinc, phosphorus, magnesium and potassium.

Romaine: Rich in vitamin A and vitamin K, supporting eye health and strong bones. Its high fiber content promotes digestion and helps stabilize blood sugar.

Red Pepper: High in vitamin C, which supports immunity and collagen production. They also contain antioxidants like beta-carotene and lutein, promoting eye and skin health.

Ingredients
  

  • Lettuce
  • 1 cup Rice
  • 1 cup Black beans
  • 1 Red pepper
  • 1 Jalapeno
  • Corn chips
  • pinch Cumin
  • pinch Chili powder
  • pinch Garlic powder
  • pinch Onion powder
  • 1 tbsp Nutritional yeast

Method
 

  1. Cook rice
  2. Saute vegetables on stove top for 8 minutes or till fully cooked. Then add black beans and spices.
  3. Add all ingredients to a bowl & enjoy

I used broccoli instead of bell pepper & then cut out rice to make it lower carb… I feel like i could eat this all week!!! Extra lemon is my fav
