Vegan Jalapeno Poppers

Craving a snack or a fun small dinner? Jalapeños are so nutritious, packed with vitamins and capsaicin. These are healthy, vegan version of the classic appetizer! Best part, vegan!

Main components

Jalapeno: High in capsaicin which boosts metabolism and increase fat burn. Rich in Vit C, A, B6, K and potassium. Contains antioxidants which can reduce free radicals. 

  • Studies have shown that capsaicin has strong anti-cancer properties and is capable of killing over 40 types of cancer cells without harming normal cells
  • May help prevent stomach ulcers & act as a natural pain reliever. 

Cashews: Contains all essential amino acids. Supports healthy bones. Great source of iron, zinc, magnesium, and copper

Jalapeño Poppers

Ingredients
  

  • 4 Jalapeños
Filling
  • 1/4 cup Cashews
  • 3 tbsp Vegan Cheese
  • 3 tbsp Breadcrumbs (panko)
  • pinch Paprika
  • pinch Onion Powder
  • pinch Garlic Powder

Method
 

  1. Soak cashews in hot water for 20 minutes
  2. Add cashews, breadcrumbs, cheese, and spices to food processor.
  3. Cut jalapeños in half & spoon out seeds (these are super spicy beware).
  4. Add filling to cut jalapeños. Optional -> top with breadcrumbs & dried red chili peppers
  5. Bake in the oven at 400F for 15-22 minutes.
