Main components

Basil: Can reduce cortisol levels. Also contains essential oils which can reduce inflammation in your body. Abundant in antioxidants!

Noodles: Sustained energy from complex carbs, essential micronutrients (B vitamins, iron, selenium), and can support digestion.

Cherry Tomatoes: The bright red hue is due to lycopene, a potent antioxidant that helps defend cells against oxidative stress and supports a healthy inflammatory response. High in vitamin K (bone health!) and vitamin C (immune support + for glowing skin).

Red Onion: Packed with antioxidants like quercetin (which neutralizes free radicals, that can cause cellular damage and are linked to chronic conditions like cancer, heart disease, and diabetes). Also contains allicin, believed to lower the risk of heart disease and cancer.

 

Ingredients
  

  • Pasta of your choice
  • 1/2 cup Basil
  • 1/2 cup Cherry tomato
  • 1 tbsp Olive Oil
  • Squeeze of Lemon Juice
  • 1 tsp Garlic powder
  • pinch Salt & pepper
  • 1 tbsp Almond milk
  • 1 tbsp Red onion
  • 1/2 cup Broccoli

Method
 

  1. Boil pasta
  2. Optional: Toss broccoli with olive oil & roast in oven at 420F for 20 min (flip half way). Add in on step 4.
  3. In a blender, mix everything else! Leave a few tomatoes to mix in with noodles.
  4. Add in chopped red onion & mix together. Enjoy!

I’m Madeline! One icky piece of chicken a few years ago quickly led me to plant-based eating. But I’ll admit, those irksome comments from a friend or family around the holidays, gets you thinking.
