Stir Fry

Stir fry is a quick, flavorful dish made by cooking bite-sized vegetables, proteins, and aromatics over high heat while stirring constantly. Rice vermicelli is lightweight carb to add some extra crunch to your stir-fry. Add in whatever other vegetables you have on hand!

Main components

Sugar snap peas: Strong source of Vitamin C, K, Folate, A, Iron, Potassium, and Manganese, along with fiber, protein, and B vitamins

Broccoli: Contains bioactive compounds known to reduce inflammation. Rich in vitamins A, C, K, & B-complex, calcium, magnesium, selenium, zinc, iron, and beta carotene.

  • High in fiber which aids in digestion, overall gut health and reduces bad cholesterol (LDL). 
  • Contains antioxidants, one in particular named sulforaphane supports liver detoxification and long-term liver health. Also, it’s known to prevent cancer cells from multiplying.

Rice Vermicelli: Great source of carbs, great for a quick energy boost!

Red Pepper: High in vitamin C, which supports immunity and collagen production. Also contains antioxidants like beta-carotene and lutein, promoting eye and skin health.

Ingredients
  

  • 1 Red Pepper
  • 1 cup Broccoli
  • 1/2 cup Snap Pea
  • 1 cup Rice vermicelli
  • 1 tsp Olive Oil
Sauce
  • 1 tbsp Soy Sauce
  • 1 tbsp Rice Vinegar
  • 1 tsp Sesame Oil
  • 1 tsp Maple Syrup
  • 1 tsp Garlic Powder

Method
 

  1. Add boiling water to a bowl with the noodles. Let sit for 5 minutes (or till soft).
    1 cup Rice vermicelli
  2. Saute vegetables on stove top for 8-10 minutes.
    1 Red Pepper, 1 cup Broccoli, 1/2 cup Snap Pea, 1 tsp Olive Oil
  3. Add noodles and sauce ingredients. Saute for 2 minutes. Enjoy!
    1 tsp Sesame Oil, 1 tsp Maple Syrup, 1 tbsp Soy Sauce, 1 tbsp Rice Vinegar, 1 tsp Garlic Powder
